Bermuda Onion Rings

Ingredients:

  2        tablespoons  unsalted margarine or butter
  1              large  bermuda onion -- about 1 lb,sliced
                        -- 1" thick
  1           teaspoon  flour
     1/4           cup  plain low-fat yogurt
  2          teaspoons  snipped fresh dill
     1/4      teaspoon  paprika
 

Preparation:

In a 12 inch, nonstick skillet melt margarine over low heat; add onion and cook, covered, until soft and transparent - about 25 minutes. Uncover, stir in flour and cook for 1 minute. Add yogurt, dill and paprika; cook 1 minute longer or until just heated through. Be careful not to let the sauce boil or it will curdle.
