Basil and Tomato Feta Bruschetta

Ingredients:

   1      pound         plum tomatoes -- diced (2 1/2 cups)
   4      ounces        Crumbled Feta Cheese with Basil & Tomato -- finely chopped
     1/2  cup           finely chopped red onion
   3      tablespoons   chopped fresh parsley
   2      tablespoons   olive oil
   1      tablespoon    chopped pitted ripe olives
     1/4  teaspoon      ground black pepper
   1                    loaf French bread -- cut into 1/2-inch
                        -- slices
 

Preparation:

MIX tomatoes, cheese, onion, parsley, oil, olives and pepper. Set aside. BRUSH bread slices lightly with additional oil. Place on cookie sheet. Broil on each side until lightly toasted. TOP each toast slice with about 2 tsp. of the tomato mixture.
