Balsamic Roasted Vegetables

Ingredients:

   1      tablespoon    olive oil
   1      tablespoon    balsamic vinegar
   1      teaspoon      fresh thyme -- chopped
   1      teaspoon      fresh marjoram -- chopped
     1/2  teaspoon      salt and pepper
   1                    red onion
     3/4  pound         tiny new potatoes -- halved
     3/4  pound         baby carrots
   3      cloves        garlic -- halved
 

Preparation:

1. In a small roasting pan or rimmed baking sheet; stir together oil, vinegar, thyme, marjoram, salt and pepper. 2. Cut onion into wedges; toss onion, potatoes, carrots and garlic with oil mixture. 3. Bake in 400F oven, stirring occasionally, for about 40 minutes or until vegetables are tender and well glazed.
