Ingredients:

1 pound seeded and peeled flesh of pumpkin -- butternut, or
acorn
squash, cut
into 1 inch pieces
2 Tablespoons butter or cooking oil
1 clove garlic -- minced
2 scallions -- minced
Salt and freshly ground pepper to taste |
Preparation:
Place the pumpkin, butter, garlic and scallions in a saucepan. Cook over
medium heat, stirring, until the butter melts. Reduce the heat to low and
cook tightly covered until the pumpkin is fork tender. Stir the mixture
occasionally so that it does not stick to the bottom of the pan. Season
serve warm. |
