Ingredients:

  1              large  tomato
  6 1/2         ounces  canned solid white tuna in water -- drained
  2        tablespoons  green onion -- finely chopped
  2        tablespoons  lowfat mayonnaise
     1/4      teaspoon  tarragon -- crushed
     1/8      teaspoon  salt
     1/8      teaspoon  fresh ground black pepper
  6                     French bread slice -- or Italian bread
                        slices, cut 1/2-inch thick
 

Preparation:

Use tomato held at room temperature until fully ripe. Remove core and cut into 1/2-inch cubes (makes about 1 cup). In a medium bowl combine tuna, green onion, mayonnaise, tarragon, salt, black pepper, and tomato; mix well. Spread on bread slices .
