2 cups sugar
2 cups vinegar
2 cups water
2 teaspoons salt -- if desired
Preparation:
Boil beets until tender, dip into cold water, peel and quarter. Combine remaining ingredients, bring to boil; add beets and bring to boil again. Fill into sterilized jars and seal.
