Tex-Mex Chili Chicken

Ingredients:

  3        tablespoons  olive oil
  4                     chicken breasts -- boneless
  1                     onion -- chopped
  1                     green pepper -- chopped
  1                     garlic clove -- minced
  8             ounces  tomato sauce
     1/4           cup  water
  1         tablespoon  chili powder
     3/4      teaspoon  salt
     1/2      teaspoon  ground cumin
     1/4      teaspoon  leaf oregano -- crumbled
     1/8      teaspoon  pepper
 

Preparation:

Heat 2 T. oil in nonstick skillet over medium heat. Brown chicken on both sides; remove. Add remaining oil, onion, green pepper and garlic; saute until tender. Add tomato sauce, water, chili powder, salt, cumin, oregano and pepper. Cook 1 minute. Return chicken to skillet. Cover; simmer 10 to 12 minutes or until chicken is cooked.
