Preparation:
Mix together spinach, mayo and blue cheese and place a spoonful on center of each chicken breast. very carefully roll up the chicken so that nothing leaks out, then, starting at one end wrap with bacon strips. I usually use 2 per breast but it depends on size. when the bacon is wrapped tightly around the chicken you can use toothpicks to hold in place. Bake at 350 f until bacon is crispy. Remove from oven and slice into medallions. |
