Preparation:
Heat oil on medium-high heat in large deep skillet. Add chicken pieces, skin side down. Cook until golden, about 6-8 minutes on each side. Turn heat to medium-low. Sprinkle shallots over chicken. Season with salt and pepper. Continue cooking another 10 minutes. To serve: place some spinach leaves on each. Place and set chicken pieces on top. The heat from the chicken will =D2steam" the spinach. Add more salt and pepper if desired and enjoy!
