Preparation:
Cut sausage into 1 inch chunks, using kitchen scissors. Heat oil in a large
saucepan over medium high heat. Saute sausage chunks, stirring frequently,
until browned. Remove sausage and reserve. Drain all oil but 1 - 2
tablespoons and saute onion and peppers until softened slightly. Add garlic
and cook another minute. Add red wine and stir to dissolve pan drippings.
Return sausage to pot, add spaghetti sauce and simmer, uncovered, about 45
minutes.
Toss with pasta or serve on sub rolls or try it on rice. |
