Santa Fe Chicken Pate

Ingredients:

  1           teaspoon  vegetable oil
     1/2           cup  onion -- chopped
  2        tablespoons  jalapeno -- chopped
  1              clove  garlic -- minced
  1              pound  boned and skinned chicken breast halves -- freshly ground
  1           teaspoon  cumin -- ground
  1           teaspoon  chili powder
     1/4      teaspoon  salt
     1/4      teaspoon  pepper
     1/4           cup  cilantro -- chopped
  1           teaspoon  lemon rind -- grated
     1/2           cup  nonfat mayonnaise
  2        tablespoons  lime juice -- fresh
 

Preparation:

Heat oil in a large nonstick skillet over medium heat untilhot. Add onion, jalapeno pepper, and garlic; saute until tender. Add chicken, and cook until browned, stirring to crumble. Drain; add cumin and next 3 ingredients, and stir well. Position knife blade in food processor bowl; add chicken mixture, cilantro, and remaining ingredients. Process until smooth, scraping sides of processor bowl once. Serve chilled or at room temperature with crackers.
