SAFFRON CHICKEN

Ingredients:

   8                    chicken breast halves -- marinated
                        MARINADE
   1      cup           plain yogurt
   2      Tablespoons   olive oil
   1      Tablespoon    fresh herbs
   1      teaspoon      chopped onion
   1      clove         garlic -- minced
                        salt and pepper -- to taste
     1/4  teaspoon      saffron
                        SAUCE
   1      cup           white wine
   1      Tablespoon    olive oil
   1      medium        size onion -- chopped
   1      medium        size tomato -- chopped
   1      cup           fresh spinach
   1      Tablespoon    fresh lemon juice
   1      Tablespoon    garlic -- chopped
     1/2  cup           heavy cream
 

Preparation:

Mix ingredients together well. Marinate chicken, covered, in refrigerator, 6 hours or so, turning occasionally. Drain chicken well and place on grill or in oven and cook until done. SAUCE Sauté onion, tomato and chicken in olive oil and white wine. Simmer to reduce. Add salt and pepper and spinach, cream, garlic and lemon juice. Simmer to reduce, watching so cream does not separate. Add saffron and mix at the moment you are ready to serve. Pour sauce over chicken, to serve. A nice accompaniment is saffron or plain rice.
