Preparation:
Combine first 3 ingredients; set aside. Carefully separate skin from body of chickens at neck are, working down to breast and thigh area. Evenly pour half of the olive oil mixture between skin and meat of both chickens; brush remaining mixture on outer skin. Place chickens on two vertical roasting racks; set in a lightly greased roasting pan. Bake a 400 degrees on lowest track of oven 55-60 minutes NOTE: Broiler-roasters may be roasted, without vertical roasting racks, on a lightly greased rack in a broiler pan at 400 degrees for 55-60 minutes.
