Rice And Chicken Salad

Ingredients:

     1/2  cup           uncooked wild rice
     1/2  cup           brown rice*
   3      cups          water
     3/4  cup           reduced calorie Italian salad dressing
   1                    avocado -- peeled/pitted/cubed
   1      tablespoon    lemon juice
   3      cups          cooked chicken -- cubed
   2                    tomatoes -- chopped
     1/4  teaspoon      ground black pepper **
 

Preparation:

Rinse wild rice. Cook wild rice and brown rice together in water, tightly covered, over medium heat for 30-35 minutes, until tender. Drain. Place in bowl and toss with dressing. Sprinkle avocado with lemon juice. Mix rice with avocado, chicken, tomatoes, and pepper. Refrigerate.
