Preparation:
Place the chicken in a roasting pan, slide it into the oven, and roast at
325°
until the chicken is tender (45 minutes to an hour). In the meantime, mash
the
garlic in a mortar and then mix in the lemon juice, a scant teaspoon salt,
and
at least a half teaspoon of cracked pepper. When the chicken is done, cut it
up on a serving platter and pour over it the garlic-lemon sauce, along with
any juice from the pan. This is good with rice or with crisp rolls that can
be
dunked into the juices. |
