Preparation:
Add 1 tbsp of the oil, 1/2 tsp salt and penne to a large pan of boiling
water and boil, uncovered, for about 10 mins, or according to packet
instructions.
Meanwhile, heat the remaining oil in a large frying pan until hot, but
not smoking. add turkey and stir-fry for 1-2 mins. Then add the pesto
and stir-fry for a further 2-3 min, until turkey is heated through.
Drain pasta, add to turkey sauce and toss over a high heat, until evenly
mixed. add cream, season to taste and toss again. Serve with the
Parmesan and basil leaves. |
