Mountain Chicken Satay

Ingredients:

  2          teaspoons  peanut oil
  1           teaspoon  garlic
     1/2           cup  tomato concasse
     1/4           cup  chunky peanut butter
  1                cup  chicken stock
     1/2      teaspoon  kosher salt
     1/2      teaspoon  crushed red chiles
  1              pound  skinless boneless chicken br
  16                    bamboo skewer
 

Preparation:

heat oil in a large skillet, over a medium flame add garlic and saute for 3-4 minutes, until fragrant stir in tomatoes, peanut butter, chicken stock, salt, and chiles heat and stir for 10 minutes remove from heat and set aside cut chicken into thin strips and thread onto skewers arrange skewers in a hotel pan pour tomato mixture over the top cover and chill for 4-24 hours remove skewers from marinade broil or grill to brown well on both sides, basting often with the marinade arrange onto a serving platter garnish as desired serve hot
