Mexican Chicken with Zucchini

Ingredients:

   1                    broiler-fryer (2 1/2 to 3 lb.) -- cut up
                        Vegetable oil
   1      large         zucchini -- cubed
   1      tablespoon    chopped onion
   1      tablespoon    chopped green pepper
   1      clove         garlic -- minced
   3      tablespoons   all-purpose flour
   1      teaspoon      salt
   1      teaspoon      pepper
     1/2  teaspoon      ground cumin
   3      cups          water
 

Preparation:

Brown chicken in hot oil in a large skillet. Combine next 8 ingredients; toss gently. Spoon vegetable mixture over chicken, and add water. Bring mixture to a boil. Reduce heat; simmer, uncovered, 40 to 45 minutes or until chicken is tender and sauce is slightly thickened, stirring often.
