Mexican Chicken Salad

Ingredients:

  4               Cups  chopped cooked chicken
  2               Cups  shredded sharp Cheddar cheese
  1                Can  red kidney beans -- (16-oz) drained and
                        rinsed
  1             Medium  onion -- chopped
     1/2           Cup  slice ripe olives
  2        Tablespoons  chopped sweet red pepper
  2        Tablespoons  chopped green pepper
  1                Can  chopped green chiles -- (4-oz) drained
  1            Package  taco seasoning mix -- (1 1/4-oz)
     1/2           Cup  sour cream
     1/2           Cup  mayonnaise
  2             Medium  size avocados -- peeled and chopped
                        (optional)
                        shredded lettuce
  2             Medium  tomatoes -- chopped
                        corn chips
 

Preparation:

Combine first 11 ingredients, stirring well. Cover and chill. At serving time, add avocado, if desired. Arrange lettuce on 8 individual serving plates; spoon about 1 cup chicken mixture onto each. Top with chopped tomato and chips. Makes 8 servings.
