Mama's Chicken With Mushrooms

Ingredients:

  1         tablespoon  olive oil
  2             cloves  garlic -- crushed
  4                     chicken breasts -- boneless & skinned
  1 1/4         pounds  fresh mushrooms -- (porcini),
                        -- julienned
                        -- into 1/8
                        -- inch strips
  1                cup  chicken broth -- (preferably
                        -- homemade)
  2 1/2      teaspoons  fresh mint -- chopped
     1/2           cup  parmesan cheese -- grated
     1/2           cup  heavy cream -- optional
 

Preparation:

In a skillet over medium high heat, add oil and saute garlic two minutes; add ch icken and saute five minutes on each side. Add julienned mushrooms, broth and fresh chopped mint. Cook, partially covered about 7 minutes, or until mushrooms are tender. Stir in cheese; cover and cook 3 minutes. Add cream and cook 2 minutes.
