Lemon Chicken

Ingredients:

     1/2  pound         boneless skinless chicken breast
   1      teaspoon      sunflower or canola oil
     1/4  cup           water
     1/4  cup           lemon juice
   2      teaspoons     soy sauce
   1      teaspoon      grated fresh ginger root
   1      teaspoon      grated lemon rind
   1      teaspoon      cornstarch
   1      teaspoon      Equal Spoonful
     1/4                red sweet pepper -- cut into strips
 

Preparation:

Slice chicken breasts into thin strips. Heat oil in skillet, brown chicken strips. In a small bowl whisk together, water, lemon juice, soy sauce, ginger root, lemon rind and cornstarch.Add this to chicken in skillet and stir-fry for 5 minutes until the mixture is bubbly. Stir in Equal Spoonful and fold in red pepper strips before serving.
