Izzys One Dish Chicken

Ingredients:

  16            ounces  skinless chicken breast halves -- * see note
  2               cups  broccoli florets
  2               cups  carrots -- scraped, cut into 2
                        -- inch pieces
  1                cup  zucchini -- sliced
  1                cup  red onion -- thinly sliced
     1/2      teaspoon  paprika
     1/2      teaspoon  basil
     1/2      teaspoon  white pepper
     1/2      teaspoon  salt
  1         tablespoon  butter -- (or low fat
                        mayonnaise)
     1/2      teaspoon  soy sauce
     1/2      teaspoon  teriyaki sauce -- (if you don t keep
                        this -- use 1 t soy sauce)
  1         tablespoon  honey
  1           teaspoon  dry mustard
  1              whole  lime -- juiced
 

Preparation:

* Please note boneless will work, but tend to get dry Wash and trim chicken breasts; sprinkle with paprika, basil, salt, and pepper. Combine next 5 ingredients; spread mixture on chicken. Preheat oven to 375. Spray a large (2 3 quart) oval baking dish with Pam. Place carrots on the bottom of the pan, add broccoli, then zucchini. Place chicken bone side down on top of vegetables. Cover with onion slices and sprinkle lime juice over it all. Bake 45 minutes or until chicken is done. If you re in a real hurry, you can buy the vegetables already cut up (or frozen) and have dinner ready in a flash!
