Italian Chicken and Olives

Ingredients:

   1      bag           White Rice
   1      tablespoon    oil
   4                    skinless -- boneless chicken breasts
     1/2  cup           sliced black olives
  14      ounces        artichokes -- drained and quartered
   1      clove         garlic -- minced
   2                    tomatoes -- chopped
     1/2  cup           white wine or chicken broth
                        lemon juice
 

Preparation:

1. Prepare rice according to package directions. While rice is cooking, heat oil in skillet.

2. Brown chicken breasts on both sides (about 10 minutes).

3. Add remaining ingredients except for lemon juice. Simmer for 10 minutes, covered.

4. Add lemon juice. Serve over hot cooked rice.
