Blueberry Breakfast Scones

Ingredients:

  2               cups  all-purpose flour
     1/4           cup  sugar
  1         tablespoon  baking powder
  1         tablespoon  orange peel -- grated
     1/4      teaspoon  salt
     1/4      teaspoon  baking soda
     1/4           cup  butter
     1/2           cup  buttermilk
  2                     eggs
  1           teaspoon  vanilla
  1                cup  fresh or frozen blueberries
                        ---orange spiced powdered sugar icing---
     3/4           cup  powdered sugar -- sifted
     1/8      teaspoon  cinnamon
     1/4      teaspoon  orange peel -- grated
                        orange juice
 

Preparation:

Stir together flour, sugar, baking powder, orange peel, salt and soda in a large mixing bowl. Cut in butter until mixture resembles coarse meal. Make a well in the center of the dry ingredients. Stir together buttermilk, eggs and vanilla. Add to flour mixture all at once. Stir with a fork just until moistened. Gently stir in the blueberries. Turn out dough onto a lightly floured board. Quickly knead dough by folding and pressing gently 12 to 15 strokes or until dough is nearly smooth. Pat dough into a 7 inch circle on a greased baking sheet. Cut into 10 wedges. Bake in a 400 degree oven for 15 to 20 minutes until golden. Remove to a wire rack to cool while you prepare the icing. Drizzle with icing and serve warm. Orange Spiced Powdered Sugar Icing Stir together powdered sugar, cinnamon, orange peel in a small mixing bowl. Add enough orange juice to make of drizzling consistency (3 to 4 teaspoonsful).
