Grilled Marinated Chicken With Tomatillo Sauce

Ingredients:

     1/4           Cup  olive oil
  1         Tablespoon  chopped garlic
  2        Tablespoons  minced fresh oregano
                        two 1 1/2-pound chickens -- boned
                        Tomatillo Sauce (recipe follows)
     1/2         Pound  tomatillos
     1/4           Cup  champagne vinegar
     1/4      Teaspoon  cumin
     1/4      Teaspoon  minced fresh oregano
     1/4      Teaspoon  minced garlic
  1                     jalapeno pepper
     1/2         Bunch  cilantro -- chopped
     1/2         Bunch  scallions -- chopped
 

Preparation:

In a small dish combine oil, garlic, and oregano. Arrange chicken in a flat dish and drizzle with marinade. Refrigerate, covered, for 12 hours. Preheat a grill until hot. Grill chickens, turning, until done and serve with sauce. (Tomatillo Sauce) In a saucepan simmer tomatillos, vinegar, cumin, oregano, garlic, and jalapeno with salt and pepper to taste over moderate heat for 10 minutes. Purée in a blender and stir in cilantro and scallions. Season to taste.
