Preparation:
1. Place all ingredients except chicken in food processor or blender. Cover and procees about 20 seconds or until smooth.
2. Place chicken in rectangular microwavable dish 11X7X11/2 inches.
3. Pour marinade over chicken, and turn to coat. Cover and refrigerate for 2-3 hours turning occasionally.
4. Rearrange chicken thickest parts to the outside edge of the dish. Cover with plastic wrap, folding back one corner to vent. Microwave on high 10-12 minutes until edges begin to cook. Remove from marinade; reserving marinade.
5. Immediately grill chicken, over medium coals 15-20 minutes brushing frequently with marinade until juices run clear when cut at the thickest point of the chicken. Discard any unused marinade. |
