Fiesta Chicken Lasagna

Ingredients:

  9                     lasagna noodles -- uncooked
  32            ounces  salsa -- thick and chunky
  9             ounces  chicken strips -- sw, thawed
  15            ounces  black beans -- rinse & drain
     1/4           cup  cilantro -- fresh, chopped
  3               cups  monterey jack -- shredded
 

Preparation:

Cook and drain noodles as directed on package. Rinse noodles with cold water; drain. Heat oven to 375. Spread 1/4 cup of the salas in ungreased rectangular baking dish, 13 x 9". Layer with 3 noodles and one-third each of the chicken, beans, cilantro, salsa and cheese. Repeat 2 times with remaining noodles, chicken, beans, cilantro, salsa and cheese. Cover and bake 20 minutes. Uncover and bake 15-20 minutes or until hot in center. Let stand 10 minutes before cutting. Note: The frozen chicken breast strips can be substituted with leftover grilled chicken breast sliced. To make ahead, cover the unbaked dish and refrigerate for 24 hours. Bake as directed.
