Creamy Marinated Baked Chicken

Ingredients:

   4      whole         boneless skinless chicken breasts -- (about 2&1/2 lb)
   1      cup           guilt free nonfat cottage cheese
   1      small         onion -- coarsely chopped
                        -- (about 4 oz)
   2      tablespoons   lemon juice
   2      tablespoons   dijon mustard
   1      teaspoon      salt-free lemon-pepper seasoning
     1/2  teaspoon      dried oregano
                        nonstick cooking spray
   1      cup           dry bread crumbs
   1      teaspoon      salt
 

Preparation:

Split breasts; remove any fat. Place meat into shallow pan or dish. Blend cottage cheese, onion, lemon juice, mustard, lemon-pepper seasoning, and oregano until smooth. Pour mixture over all sides of chicken. Cove dish; refrigerate at least 8 hours. Heat oven to 400 degrees. Spray baking pan lightly with vegetable oil. Combine bread crumbs and salt in shallow dish; stir. Dredge each chicken breast into bread crumbs, coating both sides. Arrange chicken in baking pan. Bake until golden, about 25 minutes. 8 servings/Serving size: 1 breast half
