Christmas Rice And Chicken

Ingredients:

  1                cup  christmas rice
     1/2         pound  fresh mushrooms sliced
  1                     bouillon cube
  2             cloves  garlic minced
  8             ounces  boned skinned chicken breast -- diced
  2        tablespoons  olive oil
     1/2      teaspoon  rosemary
     1/2      teaspoon  black pepper
  1                cup  water
     1/2           cup  sherry
 

Preparation:

Saute garlic in olive oil briefly. Add rice and saute until rice is coated with oil. Turn heat to medium-high. Add mushrooms and cook until tender-crisp. Add chicken and cook for 5 min. Add remaining ingredients turn heat to low and simmer for 45 min. Makes 6 servings.
