Chinese Chicken And Walnut Salad

Ingredients:

  1                cup  corn oil
     1/2           cup  hoisin sauce
     1/2           cup  soy sauce
     1/2           cup  red wine vinegar
  1         tablespoon  garlic -- chopped
  1         tablespoon  ginger -- grated
     1/2           cup  sesame seeds
                        ***SALAD***
  1              bunch  spinach
     1/2         bunch  nappa or chinese cabbage
  4              whole  carrots -- julienned
  1 1/2           cups  walnuts -- coarsely chopped
  1                     sweet red pepper -- julienned
  4              whole  scallion -- thinly sliced
  2               cups  skinless boneless chicken breast -- cooked and shredded
 

Preparation:

Combine dressing ingredients and blend well. Refrigerate. Wash spinach thoroughly and remove stems. Slice into 1/2 inch strips. Wash and core cabbage. Slice into 1/2 inch pieces. Dry and crisp in the refrigerator. Combine greens and remaining salad ingredients in a large bowl. Toss well. Add dressing to taste and retoss. Reserve dressing may be stored in a covered glass container in the refrigerator.
