CHICKEN-PASTA SALAD

                        Ginger dressing
   8                    Ounces uncooked vermicelli
   2      cups          Cut-up cooked chicken or -- Turkey
     1/2  cup           Coarsely chopped jicama or -- Water chestnuts
     1/4  cup           Chopped fresh cilantro or -- Parsley
   2      medium        Carrots -- shredded
                        1-1/4 cups)
   1      medium        Cucumber -- coarsely chopped
                        1 cup)
                        Ginger dressing
     1/3  cup           Mayonnaise or salad dressing
     1/3  cup           Plain yogurt
   1      tablespoon    Soy sauce
   1      teaspoon      Sugar
     1/2  teaspoon      Ground ginger
                        Dash red pepper sauce -- hot
                        Oil  or hot sesame oil
 

Preparation:

Break vermicelli in half. Cook as directed on package; drain. Rinse with cold water; drain. Toss vermicelli, chicken, jicama, cilantro, carrots and cucumber with Ginger Dressing. Spoon onto salad greens if desired. GINGER DRESSINGMix all ingredients.
