Chicken Satay

Ingredients:

     1/2  cup           coconut milk
   1      teaspoon      fish sauce
   1      teaspoon      brown sugar
     1/2  teaspoon      ground cumin
     1/2  teaspoon      ground coriander
     1/2  teaspoon      ground turmeric
   1      pound         skinless boneless chicken breasts
  20                    bamboo sticks -- soaked
 

Preparation:

1. In a bowl combine all ingredients except chicken and bamboo skekwers. 2. Slice chicken into long thin strips 3. Marinate chicken for at least 1 hour. 4. Thread the chicken strips onto the soaked bamboo skewers and grill on the BBQ or broiler. Notes: The Thai name for this is Satay Gai. Excellent served with Spicy Peanut Sauce and Sticky or Jasmine rice.
