Chicken Provencale

Ingredients:

  6                     boneless chicken breast
     1/4           cup  olive oil
  2        tablespoons  unsalted butter
     1/2           cup  black olive
  2          teaspoons  anchovy fillets
  1         tablespoon  garlic
     1/2           cup  dry white wine
  2               cups  tomato concasse
  2        tablespoons  fresh basil leaves
 

Preparation:

In large skillet heat butter and oil. Saute chicken on both sides until brown. Remove from pan. In same skillet swirl wine; add garlic, tomatoes, anchovy, olives and basil. Simmer 5 minutes. Add chicken, cover, simmer until tender, about 30 minutes.
