Chicken Noodle Stroganoff

Ingredients:

  8               cups  wide egg noodles
  2        tablespoons  butter or margarine
  8             ounces  boneless -- skinless chicken
                        breasts -- cut into 1-inch
                        -- chunks
  1                     onion -- chopped
  1           teaspoon  minced garlic
  8             ounces  fresh sliced mushrooms
     1/2      teaspoon  salt or to taste
  1                cup  regular or light sour cream
  1           teaspoon  dijon mustard
  2          teaspoons  cornstarch
     1/2           cup  sliced green onion tops
 

Preparation:

Cook noodles according to package directions. Meanwhile, in a large skillet over medium heat, melt butter or margarine. Saute chicken, onion, garlic, mushrooms and salt for 5 to 7 minutes, or until chicken is almost cooked through and onions are soft. In a small bowl, mix sour cream, mustard and cornstarch. Stir into chicken. Drain pasta and return to pot. Add sauce, chicken and green onions and toss well. Prep Time: 10 minutes Cook Time: 5 minutes Makes: 6 to 8 servings
