Chicken Liver Pilaf

Ingredients:

  1         tablespoon  vegetable oil
  1                cup  onion -- chopped
  2               cups  mushrooms -- sliced
  1                cup  celery -- sliced
  12            ounces  chicken livers
  1                cup  cooked brown rice
  1           teaspoon  salt
  1           teaspoon  basil leaves -- [presume dried]
  1               dash  nutmeg
 

Preparation:

1. Heat oil in skillet; add onions and saute until softened; add mushrooms and celery and saute for 5 to 8 minutes or until tender. 2. Spray separate nonstick skillet with nonstick cooking spray; add livers and cook until firm. 3. Add livers and remaining ingredients to vegetable mixture and cook, stirring often, until heated.
