Chicken Liver Kebabs

Ingredients:

  1 1/2           cups  juice packed pineapple chunks
  18                    dried apricot halves
     3/4           cup  what germ
  1           teaspoon  dry thyme leaves
  1           teaspoon  curry powder
     1/4      teaspoon  garlic powder
     1/4      teaspoon  salt -- to 1/2 teaspoon,opt
  1              pound  chicken livers -- cut into 24-pieces
  2                     egg whites -- beaten
  1                     green pepper -- cut into 1"-
                        -- squares
     1/2         small  red onion -- cut into 1"-
                        -- squares
  6                     wooden skewers -- 12-inch
 

Preparation:

Drain pineapple chunks, reserving juice. Soak apricots 20 to 30 minutes in pineapple juice. Meanwhile, combine wheat germ, thyme, curry, garlic powder and salt in small bowl; reserve. Dip liver in egg white and roll in wheat germ mixture; reserve. Coat baking sheet with nonstick cooking spray. Alternate green peppers, liver, onions, pineapple chunks and apricots on skewers. Place on baking sheet. Bake in 375 degree overn 25 to 30 minutes, until livers are cooked through.
