Chicken Breasts With Cumin Coriander and Lime

Ingredients:

  3        tablespoons  fresh lime juice
  1           teaspoon  ground cumin
  1           teaspoon  ground coriander
  1           teaspoon  salt
  1           teaspoon  sugar
     1/8      teaspoon  cayenne pepper
  4                     skinless boneless chicken breast halves
                        cooking spray
  1         tablespoon  fresh cilantro -- chopped
 

Preparation:

1. In a large bowl mix lime juice, cumin, coriander, salt, sugar, and ground red pepper; add chicken, tossing to coat. 2. Spray grill pan with non stick cooking spray; heat over medium-high heat until hot but not smoking. Add chicken and cook 5-6 minutes per side or until juices run clear; turning once and brushing with any remaining cumin mixture. 3. Place cooked chicken breasts on platter, spinkle with chopped fresh cilantro.
