Spanish Chicken With Parsley Rice

Ingredients:

  1                cup  rice
  2        tablespoons  oil
  4                     boneless skinless chicken breasts
  1              small  onion -- diced
  1             medium  red bell pepper -- seeded and diced
  1                cup  frozen corn
     1/2      teaspoon  garlic powder
  1              large  tomato -- diced
     1/2           cup  parsley sprigs -- finely chopped
 

Preparation:

Cook rice according to package directions. While rice is cooking, heat a large skillet and add oil. Sear chicken and cook until about half done; remove from pan and set aside. To the same skillet, add corn, onions and peppem; saute' until onions are soft. Add tomato and garlic powder. Simmer for one minute and then add back the chicken, nestling it into vegetables. Simmer for about five minutes or until chicken is cooked . To serve, mix parsley into the rice and mound it on a platter. Place the chicken neatly on top of rice and pour vegetables over it. Preparation time: 25 minute
