Crostini With Chicken Liver Pate

Ingredients:

     1/2         pound  chicken livers
  4          teaspoons  olive oil
  2        tablespoons  butter -- (optional, to
                        -- taste)
     1/4           cup  chopped onion
  1           teaspoon  sage -- (or a sprig)
     1/2      teaspoon  salt -- (approx.)
                        lemon juice
                        parmesan cheese grated -- (optional to taste)
 

Preparation:

1.Clean and rinse the the chicken livers. Saute the onion in the olive oil and (butter) until golden, add chicken livers and sage, cover saucepan and cook over low flame 'til done (8 - 10 mins). Toast the bread. Discard sage and add lemon juice and optional cheese. Spread the mixture on the toasted bread, pour any extra juice from the pan on top. Re-heat in medium oven for a minute before servin
