Preparation:
Saute onions till tender, add mushrooms. Add chicken breasts to pan, saute, turning till no pink shows. Coat one side of each chicken breast with marmalade; after turning coat other side with grated orange zest. Splash in the Sunny Delight, and simmer a little while longer. Reserve chicken breasts. Add flour to pan, a little at a time, and whisk (with a plastic fork if you're using a fry-pan with a non-stick surface) till the flour is dissolved and the sauce is thick. Replace chicken pieces in pan, and simmer a few minutes more, stirring occasionally, making sure chicken is well-coated, and serve piping ho |
