Preparation:
Cook contents of rice package according to package directions. Melt butter in a large saucepan and saute onion until tender. Stir in flour, salt and pepper. Gradually stir in milk and chicken broth. Cook, stirring constantly, until thickened. Add chicken, pimento, parsley, almonds and cooked rice.
This can be frozen in plastic bags at this point. To serve, defrost, place into a greased 2 quart casserole and bake, uncovered, at 400 degrees for 30 minutes (or microwave until hot). |
