Cheddar Chicken Rolls

Ingredients:

   4      whole         chicken breasts -- skinned, halved
                        -- lengthwise and
                        -- boned
                        salt
                        pepper
   1      cup           grated sharp cheddar cheese
   1      tablespoon    water
   1      teaspoon      minced dried onion
     1/8  teaspoon      tarragon -- minced
   3      tablespoons   butter or margarine -- melted
 

Preparation:

Place chicken between 2 pieces of clear plastic wrap. Pound with flat side of meat mallet to 1/8 inch thickness. Remove plastic wrap, season both sides of chicken with salt and pepper. Combine cheddar cheese, water, dried onion and tarragon and divide evenly among chicken breasts. Fold in sides and roll up jelly roll style. Be sure the folded sides are inside the roll. Skewer with wooden picks. Place chicken rolls on a broiler pan. Brush chicken with melted butter or margarine. Broil 5 to 6 inches from flame for 15 minutes. Turn, brush with butter and cook 15 minutes more.
