Cantonese Chicken Stir Fry

Ingredients:

   1      whole         chicken breast -- deboned, skinned
                        -- and
                        -- sliced into strips
   1 1/2  tablespoons   soy sauce
   2      teaspoons     cornstarch
   1      teaspoon      sherry or chicken broth
   1      dash          pepper
   2      tablespoons   vegetable oil
   3                    green onions -- cut into 1" pieces
   2      cups          diagonally sliced celery
   2      cups          sliced fresh broccoli or snow pea pods
   2      cups          fresh bean sprouts
   1      tablespoon    minced fresh ginger -- or
   1      teaspoon      ground ginger
     1/4  cup           chicken broth
 

Preparation:

Combine chicken with soy sauce, cornstarch, sherry or broth, and pepper; marinate 1/2 hour. Heat oil in wok or large skillet; stir fry chicken and onions for 5 mintes. Add celery, broccoli , or pea pods, bean sprouts, and ginger; stir fry for 10 minutes. Add broth; cover, heat 2 minutes. Serve over rice.
