Hollywood Chicken With Almonds, Stir Fry

Ingredients:

  1 1/2         pounds  Chicken Breasts, Skinned -- Cut Into 1" Pieces
     1/3           cup  Chicken Broth
  2        tablespoons  Soy Sauce
  4          teaspoons  Cornstarch
  2        tablespoons  Peanut Oil
     1/4           cup  Sliced Almonds
  6              Whole  Green Onions, Bias Sliced Into 1" Pcs
  6             ounces  Pkg. Pea Pods -- Thawed
  2               cups  Sliced Fresh Mushrooms
 

Preparation:

1. Stir chicken broth and soy sauce into cornstarch; set the soy sauce-broth mixture aside. 2. Heat Oil over high heat. 3. Add almonds and stir fry 1 minute. Remove almonds. 4. Add Chicken and stir fry for 2 to 3 minutes, or until done; remove chicken. 5. Add green onions and pea pods and stir fry 1 minute; remove. 6. Add mushrooms and stir fry 1 minute. 7. Stir broth mixture; add to mushrooms. Cook and stir until bubbly. 8. Stir in chicken and vegetables. Cover; cook 1 minute. 9. Stir in almonds. Makes 6 servings.
