Chicken and Orange Salad

Ingredients:

  2        tablespoons  scallions or green onions -- finely chopped
  2        tablespoons  lime juice
     1/4      teaspoon  salt
  2               cups  cooked chicken -- cubed or shredded
  1                cup  cooked green peas
  1                cup  mayonnaise or salad dressing
     1/4           cup  carrot -- finely chopped
     1/4           cup  celery -- finely chopped
     1/4           cup  fresh cilantro -- finely snipped
  3        tablespoons  orange juice
     1/2      teaspoon  salt
     1/2      teaspoon  ground cinnamon
     1/4      teaspoon  freshly ground pepper
                        Lettuce leaves
  3                     oranges -- peeled and sectioned
                        or unpeeled and cut into wedges
  2                     avocados -- cut into wedges
 

Preparation:

1. Sprinkle scallions with lime juice and 1/4 teaspoon salt; cover and refrigerate.

2. Mix remaining ingredients except lettuce, oranges and avocados; cover and refrigerate at least 1 hour.

3. Spoon chicken mixture onto lettuce. Garnish with oranges and avocados; sprinkle with scallions.
