Chicken and Fruit Salad with Green Chill Dressing

Ingredients:

  3               cups  salad greens and shredded red cabbage -- bite-size pieces
  2               cups  cooked chicken or turkey -- cubed or shredded
  1 1/2         pounds  melon -- see below
  2               cups  pineapple -- bite-size pieces
     1/2         small  jicama -- julienned
                        or
  2             stalks  celery -- sliced
                        Green Chili Dressing
 

Preparation:

Melon: honeydew, cantaloupe, casaba or Spanish melon, cut into thin wedges. Arrange salad greens and cabbage on platter or 4 salad plates; top with chicken, melon, pineapple and jicama. Garnish with lime slices and cilantro, sprigs, if desired. Serve with Green Chili Dressing.
