Chicken and Broccoli Dijon

Ingredients:

  1              pound  boneless skinless chicken breast halves
     1/2           cup  chicken broth
  1         tablespoon  soy sauce
  4               cups  broccoli flowerets
  1              clove  garlic -- crushed
  1         tablespoon  vegetable oil
     1/3           cup  grey poupon country dijon mustard
 

Preparation:

Rinse chicken; pat dry. Cut chicken into bite size strips. In small bowl, combine chicken broth and soy sauce; set aside. In large skillet, over medium high heat, cook and stir broccoli and garlic in hot oil for 3 to 4 minutes or until broccoli is tender crisp. Remove from pan; keep warm. In same skillet, cook and stir chicken strips for 3 to 4 minutes or until done. Stir in broth mixture. Heat to a boil; reduce heat. Stir in mustard. Return broccoli to pan; heat through.
