Ingredients:

   1      cup           yellow cornmeal
   1      tablespoon    sugar
   1      teaspoon      salt
   2      cups          milk -- hot
   3      tablespoons   unsalted butter
   3                    egg yolks
   3                    egg whites
   2      teaspoons     baking powder
     1/2  cup           white cheddar cheese
     1/4  cup           swiss cheese -- grated
                        salt & black pepper
 

Preparation:

Preheat oven to 375. Butter a souffle dish (or 1-2 quart baking dish). Mix together cornmeal, sugar and salt. Stir dry mixture into hot milk in saucepan on medium heat. Turn to low and stir in butter. Remove pan from heat and beat in egg yolks and baking powder. Let cool somewhat. Stir in cheddar and Swiss cheeses. Fold in egg whites. Pour into prepared pan. Bake until golden and puffy. Serve immediately. Approximately 10-25 minutes.
