Ingredients:

  2             pounds  wholemeal flour
  1              pound  self-raising flour
  2             ounces  coarse bran
  2             ounces  coarse wheatgerm
  2          teaspoons  bread soda
  1           teaspoon  salt
  4             ounces  butter
  2              large  eggs
  1 3/4          pints  buttermilk
 

Preparation:

Makes 1 Large or 2 Medium Loaves Preheat a very hot oven 425øF/220øC/Gas mark 7. Mix all the dry ingredients and rub in the Butter. Whisk the Eggs into the Buttermilk. Mix the liquid into the dry ingredients thoroughly, making sure the mixture is nice and soft. Shape into a round loaf, brush with any remaining mixing liquid and cut a cross into the top. Put onto a floured baking tray, reduce the heat to 400øF/200øC/Gas mark 6 and bake for 40-45 minutes or until the top is nice and brown or the bread sounds hollow when tapped on the base. Turn it over and cook for a further 5 minutes. If making two loaves, reduce the cooking time about 30 minutes.
