Molasses Multigrain

Ingredients:

  6               cups  warm water
  6             ounces  fresh yeast -- see note
  5             pounds  & 8 oz. bread flour
  8             ounces  molasses
  1              pound  & 8 oz multigrain mix 
  4             ounces  butter
  1                cup  egg whites
  3             ounces  salt
 

Preparation:

Mix together dry ingredients, add in molasses, butter and egg whites. Sahpe into a ball and let rise until doubled in size. Pinch down and shape into desired shape, place in baking pan (if using). Let rise 3/4 again and bake in a 400F oven about 20-30 minutes. Bread will sound hollow when tapped on the bottom when it is done.
